Our experts, Cindy Ayers, Diane Holtaway, Jenn Leimkuhler, and Debbie Conway are here to answer your questions about creating post-Thanksgiving meals. Welcome! Campbell's: Hey, it's great to be here. Allisonjames: How do you make Turkey pie? Is it basically your leftover turkey and bread dressing? Diane From Campbell's: We have a delicious southern turkey cornbread potpie recipe. It starts with two cups of cubed cut turkey and a can of Campbell's condensed cream of chicken soup with an 8-oz can of corn. Mix the turkey, corn and soup together. Pour into a nine-inch pie plate. Top with refrigerated cornbread twists or if you have leftover stuffing that works well to as a topping. Bake at 425 for 15 minutes. Thelma: I'd like to cook my Thanksgiving dinner with making leftovers in mind. Last year, we hardly touched them and I would like to make sure this doesn't happen this year. Are there certain foods that I can serve for our feast that make great leftovers? Cindy From Campbell's: Any fresh vegetable that you use can certainly be combined with the turkey and one of delicious condensed cream soups. We have a delicious casserole using tradition turkey leftovers, just layer in a casserole dish, cut up cooked turkey stuffing, green bean bake, cranberry sauce, and top it with your favorite Campbell's cream soup or Franco American gravy. You can take your favorite Campbell's condensed cream soup and mix it with left over turkey and vegetables and serve it over mash potatoes and rice. Danelle: This is what I usually have leftover - About 3 pounds of turkey, three or four servings of yams, a pint of gravy, stuffing, and a ton of mashed potatoes. Do you have any idea on what to do with this combination? Cindy From Campbell's: Again, make some creamy turkey mixture and depending how much gravy you have supplement it with a cream soup and then cover that and make a shepherd's pie with the mashed potatoes. If the yams are mashed, you can make the topping half white potatoes and half yams for a two-toned look. Jenn From Campbell's: She could take the leftover mashed potatoes and mix Swanson's chicken broth, or chicken broth with roasted garlic. Put toppings on, like cheddar cheese or bacon bits, to make a soup.
